Would really appreciate it. I don’t bake cakes, but this is the one I couldn’t mess up, unless I just flat out burned it!

    One Pan Cake
2 1/2 cups all purpose flour
    1 1/2 cups sugar
    1/2 cup cocoa
    2 tsp baking soda
    1/2 tsp salt
    2/3 cup vegetable oil
    2 tbsp cider vinegar
    1 tbsp vanilla
2 cups cold coffee or water
    1/3 cup sugar
    1/2 tsp cinnamon
Stir together the flour, 1 1/2 cups sugar, cocoa, soda and salt in an ungreased 12 x 8 baking pan.
Make 3 wells in the mixture; pour oil in one, vinegar in one and vanilla in one.
Pour in coffee and stir all with a fork until well mixed. Spread into an even layer.
Combine 1/3 cup sugar and cinnamon; sprinkle half over the batter.
Bake in a 350F oven for 35 to 40 minutes. Sprinkle remaining cinnamon sugar mixture over hot cake. Cool 15 to 20 minutes before cutting.
    Makes 6 to 8 servings

I don’t know about that exact recipe but my mom always made a cake like that and what she did was replace the eggs with 1 1/2 cups (cold) coffee and I think she added an extra teaspoon of oil to make up for something about the missing eggs. It was very good, she made it all the time and she was never very fussy about measuring stuff but it always turned out.
