Can I Put Tia Maria In A Chocolate Truffle Recipe?

February 5th, 2010 by Rexx

I want to make a chocolate truffle recipe for a dinner party tomorrow evening and i know it is possible to put alcohol in truffles, but i was wondering whether or not tia maria would be ok, i thought the coffee liquer would compliment the rich truffle taste. Also, at which point in the cooking process would i add the liquer? Thanks!

Use to love Tia Maria. I still have an unopened bottle that dates back from the late 80’s to early 90’s. Don’t ask me why.
I bet it would be just fine.

Here is a recipe that you can incorporate any liquor into:
10 ounces bittersweet chocolate, chopped fine
    3 tablespoons unsalted butter
    1/2 cup heavy cream
    1/4 cup Tia Maria
1/2 cup of what ever you decide to coat truffles in cocoa powder, nuts, etc
-Melt 10 oz of chocolate and butter. Either in a bain marie or in the microwave in 30 second increments, chocolate burn easily! Once melted set aside.
    - Heat heavy cream over medium heat ’til simmering
    - Remove from the heat and pour the mixture over the melted chocolate mixture; let stand for 2 minutes. Mix until all chocolate is melted and mixture is smooth and creamy.
    - Gently stir in the Tia Marie. Refrigerate for a hour.
    - Using a melon baller, scoop chocolate onto a sheet pan lined with parchment paper and return to the refrigerator for 30 minutes.
    - Remove the truffles from the refrigerator and shape into balls by rolling between the palms of you hands.
At this point you would normally dip in tempered chocolate or you can use chocolate coating, it has to be coating or it won’t solidify. You can find in in the produce department of you grocery and it normally comes in a microwaveable container.
However, it’s not necessary. You can just roll the balls in nuts or dutch processed cocoa powder. And wallah you done!

You bet. Pour almost boiling cream over broken up chocolate. Stir through until glossy and melted, then add the butter. When that’s melted and combined add the Tia Maria – prbably about a double shot. Then refridgerate until set, and then shape and dip your turffles. Yum!
