You can do this in the blender if you want... Pampered Chef does it in a pitcher that has a plunger attached but if you dont have one, the blender works well
Frosty Latte
Ingredients:
4 cups (1 L) vanilla or coffee ice cream, slightly softened
2 cups (500 mL) milk, well chilled
2 cups (500 mL) brewed coffee, cooled to room temperature
Directions:
1.Scoop ice cream into Quick-Stir® Pitcher. Add milk and coffee. Cover pitcher with lid; plunge to mix. Serve immediately.
Yield: 6 servings
Nutrients per serving: (1 cup/250 mL): Calories 230, Total Fat 12 g, Saturated Fat 7 g, Cholesterol 40 mg, Carbohydrate 24 g, Protein 5 g, Sodium 90 mg, Fiber 0 g
Vanilla Latte
Ingredients:

2 cups (500 mL) water
1/3 cup (75 mL) instant coffee granules
1/3 cup (75 mL) sugar
1 1/4 tsp (6 mL) vanilla extract
Assorted toppings such as thawed frozen whipped topping, grated chocolate or ground cinnamon (optional)
Directions:
1.Whisk together milk, water, coffee granules, sugar and vanilla in Large Micro-Cooker®. Cover and microwave on HIGH 3 minutes; carefully remove cover and whisk. Microwave, covered, an additional 3 minutes or until hot. Whisk until well blended.
2.Carefully pour hot latte into Carafe; serve with assorted toppings, if desired.

Here's a good one my friend introduced me to years ago...if you don't have an espresso maker.
Pour into blender...1/2 cup ice cubes, one cup vanilla (or chocolate) ice cream, 1/2 cup whole milk and (depending on how strong you want it) 2 to 3 tbsp. of instant coffee.
Blend together, and serve topped with whipped cream, and if you use chocolate, top the whipped cream with Hershey's syrup. If you use vanilla, top the whipped cream with cinnamon.
It's very good.
