    “Sour Cream Coffee Cake” – Serves 8 to 10
    1/2 cup chopped walnuts
    1 tsp. cinnamon
    1 tsp. confectioners’ sugar, plus additional for dusting
    1 tsp. vanilla extract
    1 cup lightly salted margarine; softened
    2 cups granulated sugar
    2 eggs
    2 cups all-purpose flour
    1 tsp. baking powder
    1 tsp. salt
    1 cup sour cream
    1) Preheat oven to 350*. Grease and flour 10″ bundt pan.
    2) Mix walnuts, cinnamon, 1 tsp. confectioners’ sugar and vanilla; set aside.
    3) Cream margarine and granulated sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift flour with baking powder and salt. Beat in alternately with sour cream.
    4) Pour half the batter into prepared pan; sprinkle with half the nut mixture. Pour in remaining batter. Sprinkle top with remaining nut mixture.
    5) Bake 1 hour and 10 minutes. Cool 10 minutes in pan and remove to wire rack. Sprinkle with confectioners’ sugar.
