Looking For Old Fashioned Coffee Cake/crumb Cake Recipe Like Grandma Used To Make.?

July 27th, 2009 by Rexx

This recipe had just a few ingredients, made in a layer cake pan w/ crumb topping. Not very sweet, but just right w/coffee or tea. Very quick to make with things most people have on hand. the recipe was in a very old cookbook, but can’t remember the name.

    Crumb Coffee Cake
A sweet treat that uses common ingredients. I like to add cinnamon to the crumb topping, but it’s good either way. Margarine or shortening will work instead of butter in this recipe. If you don’t have sour milk you can make it by adding 1 tablespoon of lemon juice or vinegar in a measuring cup and filling with milk to the one-cup measurement. Stir and let stand at room temperature for 10 minutes. You’ll have sour milk for the recipe.
    1/2 cup butter, melted
    2 cups packed brown sugar
    2 cups all-purpose flour
1 cup sour milk (see remarks)
    1 large egg, beaten
    1 teaspoon baking powder
    1 teaspoon ground cinnamon (optional)
Preheat oven to 325°F and spray an 8-inch square pan with cooking spray.
Mix the brown sugar and flour until well combined and lump free, add the melted butter and stir well or crumble it between your hands until well blended.
Reserve 3/4 c of the mixture for topping, if desired mix cinnamon into the topping mixture.
Mix in the baking powder, then add the milk and egg and mix well.
Sprinkle the reserved crumbs evenly over the top of the batter.
Bake at 325° for about 55-60 minutes or until cake pulls slightly away from the side of the pan and a toothpick inserted into the center comes out clean.
Serve warm, even better with whipped cream, cool whip or ice-cream.

    Coffee Crumb Cake
5 cups flour (it’s best to use half all-purpose flour and half Bisquick)
    3 cups granulated sugar
    1 teaspoon salt
    3 3/4 teaspoons baking powder
    1 ¼ cup vegetable oil
1.In a large bowl combine flour, sugar, salt and baking powder. Mix together with hands until well combined. Add oil and mix together with hands.
2.Divide this mixture, one half slightly larger than the other, in 2 bowls.
    3.In the smaller portion add:
    •3 eggs
    •1 1/8 cups milk
    •2 teaspoons vanilla extract
Mix well until free of lumps ( mixture will be thin ).
    4.Pour into greased 9 x 13-inch pan.
    5.In the larger portion add:
    •2/3 bar of butter
    •2 teaspoons cinnamon
    •1 cup ground nuts
Mix with hands, making crumbs, leaving some large crumbs ( I usually make double the crumbs and leave large crumbs instead of small ones)
6.Bake at 400 degrees F for 25-30 minutes till browned.
7.Cool and sprinkle with powdered sugar.
