What Are Special Ingredients You Use In Recipes?

someone in another thread substitutes almond for vanilla extract, another adds nutmeg to the ricotta in lasagna. i add coffee to some pastries, or substitute the not so sweet health-food-store sugar, and lots of sauces are picked up by anchovies! what sorts of other special ingredients do you use in special recipes?

    I use Mrs. Dash mesquite seasoning with almost every meat and fish dish. It doesn’t have salt and a real subtle flavor, so just a sprinkle gives stuff some extra something. I also throw a bit of grated parmesan into to anything cheesy to make it interesting.

    i add cinnamon to pork dishes and nutmeg to anything with cream and garlic goes everywhere savory
