Why Do You Have To Boil Homemade Kahlua So Long?

I just finnished making my first batch of homemade Kahlua, and my recipe said to boil the coffee,sugar and water and let it simmer for 2 hours. It got syrupy, but them at the end the recipe said to add more water.
Why do you have to boil it down, then add more water? I was just wondering if it would work the same to boil it about 30 minutes to dissolve the sugar?

    I just boil mine long enough to dissolve the sugar and turn clear. Then I add the instant coffee and stir to dissolve. After it cools, I add the vodka. The only reason I can think of for boiling the goo into a syrup would be to add body, something you can do with corn syrup or glycerine.
