I Would Like To Make A Chocolate Expresso Cake… Can I Substitute Fresh Brewed Expresso For Water??

February 26th, 2010 by Rexx

I am using a box cake mix- triple fudge chocolate– or something real yummy sounding.
I am a pro at messing up cakes & cookies – and I know baking recipes aren’t to be messed with. But it’s my husband’s birthday and I wanted to do something different…
I am going to chill the expresso to room temperature because I can forsee that it would ruin the eggs if hot… other than that- I would assume expresso is the same as water other than the taste… ??? :)
Any advice or warnings would be appreciated… and I guess if the cake is ruined I could go pick up a tiramisu or something for him. :)
We both LOVE coffee so I can’t imagine it would be anything near strong for us & I know chocolate and coffee compliment eachother…. I also figured I could get a fudge frosting or something if the cake isn’t sweet enough… but I don’t know why it wouldn’t be since the mix probably is full of sweetness.
Thank you!!

How Did Famous Amos Keep His Cookie High In A Mound Without Going Flat Like Mine When Baking?

February 17th, 2010 by Rexx

I can make them crispy, but they keep going flat when baked. They don’t stay high in a mound like the original Famous Amos.
Any ideas? Btw, I don’t believe in the recipes circulating on the internet that he used bisquick, or instant coffee, or powdered milk, or cocoa of all things.

Where Can I Find A Soda Called Brio? It’s An Italian Soda A Bit Like A Cola, But Not The Coffee-ish Chinotto.?

February 1st, 2010 by Rexx

It was made from an Italian recipe somewhere in Burnaby, and they used to have the Chinotto and this less-strong soda called Brio. Anyone know where I can find in Victoria, or perhaps Vancouver? Thanks.

Also the recipe for their scones and cupcakes and thier polar bear cookies would be awesome, (I really want to know what kind of icing the use, I attacvhed a pic of one. Maybe a n experienced baker will know what kind of icing it is.http://farm4.static.flickr.com/3021/3103… <—- that is the cookies picture
